A great opportunity to broaden your experience and even to upskill in a niche food scene, which can provide an exciting change to the standard work/life routine most often associated with kitchens. You’ll be responsible for helping to deliver a quality Italian—Australian Alpine dining experience to hotel guests and the wider Mt Buller community, whilst getting to enjoy plenty of time on the slopes of an iconic Australian ski resort, as long as you are able to manage your time effectively and make sure that our diners are delivered a truly unique snow experience seven nights a week during the whole winter season. We need someone who is familiar with all of the daily operations of the kitchen and able to perform any task if needed, including prepping, cooking and plating food within hygiene and safe food prep guidelines. You’ll need to be a team player who can also lead other kitchen workers and act as intermediary between the kitchen and the wait staff, ensuring that meals are prepared and served with the care and quality our diners expect. If you can remain organized and professional at all times, report vital information to the Head Chef and assume all of their responsibilities on nights when they are away from the kitchen, serving up a consistent Italian-Australian alpine snow experience night after night, then we want to hear from you.

Key Responsibilities

  • Prepping and cooking food

  • Running the kitchen when the head chef is away

  • Manage kitchen staff

  • Ensure your team has high culinary standards and that that all kitchen workers are performing at the level required by a professional kitchen

  • Organise discipline and incentives to ensure productivity

  • Help the Head Chef with training and scheduling

  • Manage food purchasing and storage

  • Maintain a safe and hygienic kitchen environment

  • Help to create new recipes and write menus

  • Resolve problems

  • Ensure quality Control

  • Help with portion control and plating

Skills

  • A flair with ingredients

  • An ability to stay calm when the pressure mounts

  • Strong leadership skills and communication abilities

  • First rate culinary skills

Personal Requirements:

  • Must have experience in varied food services

  • Enjoy working with people

  • Possess a friendly, helpful and patient attitude in the kitchen

  • Have at least 2 years’ experience in the kitchen

Please note that this job will involve working mostly evenings and nights. Applicants must hold a valid Australian work visa and be available to work the whole winter season from May to October. On-snow accommodation is included in the remuneration package.
